The Low Salt Diet

SALT IN COOKING

  1. Do not use salt in cooking. Doing so is just a habit. Vegetables are best steamed or cooked in a minimum amount of water; this retains both the taste and the vitamins. Microwave cooking of vegetables is a good idea as very little water is used and no salt is needed.

  2. Do not use salt while cooking rice. Brown rice has more flavor and can be cooked with your favorite spices. Experiment with different herbs and spices.

  3. If you are used to having salt for many years it will take your taste buds sometime to adjust to the taste of foods without it. When you start a low salt eating pattern, the concentration of sodium in your saliva decreases and, after a period of weeks, you will find that food tastes much better without salt.

  4. It’s important to preserve initially to re-educate your taste buds. That’s why it is better not to resort to salt substitutes or half salt substitutes, as then you do not learn to appreciate the taste of foods in their natural form.
