VEGETABLE SOUP

Cooking time 1520 minutes
You will need:
- 300 gms. Diced vegetables (carrots, tomato, turnip, onion,
leek, and/or celery, but not potatoes or parsnips)
- 575 ml of VERY CLEAR meat stock with all fat removed or
vegetable stock
- Parsley
- Seasoning
METHOD
- Prepare and dice vegetables
- Simmer in stock for about 15 minutes
- Season well and garnish with chopped parsley.
- This non-thickened soup has an excellent flavour and helps
to avoid the feeling of being hungry
