QUICK VEGETABLE SOUP
Cooking time 10 minutes
You will need: Approx.
- 450 g mixed vegetables
- Chopped parsley
- 750 ml stock or water
- Grated cheese
- Seasoning
- *Do not choose a good mixture of vegetable for an
interesting flavor. Use no potatoes and not many carrots in this.
METHOD
- Peel and grate the vegetables on a coarse grater.
- Bring the stock or water to
boil, add the vegetables and seasoning and cook rapidly for about for about 5-8 minutes
until the vegetables are just tender.
- Pour into hot soup cups and sprinkle with lots of grated cheese and parsley
