Serving Soups when Dieting

LETTUCE SOUP

Cooking time – 10 minutes

You will need:

  • ½ to 1 onion
  • 2 tomatoes
  • 575 ml chicken stock
  • ½ lettuce
  • Seasoning

METHOD

  1. Grate the large onion (or 1 small onion) and the sliced, skinned tomatoes.
  2. Simmer in the clear stock until tender.
  3. Add finely shredded lettuce and seasoning.
  4. Cook steadily for 10 minutes
