ICED CUCUMBER SOUP
Cooking time -15 minutes
You will need:
- 1 medium sized cucumber
- 1 small chopped onion
- 20 gms Butter
- 250 ml of stock
- 2 tblspn milk
- Seasoning
- Lemon
METHOD
- Cut the cucumber into pieces, leaving on some of the peel.
- Fry onion in butter, add
cucumber, half the stock, seasoning and simmer gently for about 15
minutes.
- Put in the electric blender.
- Add milk and rest of the stock, when cold
pour into freezing tray, leave until lightly frosted.
- Serve in soup cups garnished
with lemon.
