CLEAR BEET ROOT SOUP
2 servings
Cooking time 1 hour 20 minutes.
You will need:
- 1 small beet root, cooked or uncooked
- pinch sugar
- Seasoning
- 1 teaspoon lemon juice
- 350 g of chicken or vegetable stock
METHOD
- Cook beet root, steadily until soft, then cut into very
tiny shreds. Keep a teaspoon of these for a garnish.
- Put the rest of the beet root into the saucepan with all
other ingredients and cook for about 20 minutes.
- Rub through a sieve or beat well until with no pieces
remain, then reheat.
- Pour into soup cup and garnish with the strips of
beetroot.
This can be served cold or hot.
