VARIATION ON BASIC DRESSINGS
TOMATO SALAD DRESSING
No cooking
- You will need:
- 100 gms of thick tomato puree made from
good 200 gms tomatoes
- 2 tsp yoghurt or milk
- Pinch salt, pepper sugar
- ½ tsp made mustard
METHOD
- Squeeze lemon juice or vinegar.
- Skin tomatoes and if very firm heat for a few minutes with little water. If soft, this
is not necessary.
- Rub through a sieve and mix with the rest of the ingredients.
GARLIC DRESSING
No cooking
METHOD
- Add ½ clove or very finely chopped garlic and, if liked, a teaspoon of
finely chopped parsley to any of the salad
dressings.
- Serve with crisp chicory, celery, and with ham.
HARD-BOILED EGG MAYONNAISE
No cooking
You will need:
- Yolks of 2 hard boiled eggs
- 1 tblspn vinegar or lemon juice
- Salt
- ½ artificial sweetener tablet
- 2 tblspns milk or thin cream
- ¼ tsp dry mustard powder
- Pepper
METHOD
- Rub the egg yolks through a sieve or pound until very
smooth then add all the seasonings.
- Gradually beat in the cream, then the
vinegar and continue beating until very
smooth.
