TANGY CHICKEN SALAD

Serves 4.

You will need

  • ¾ cup natural skim milk curds
  • ¼ cup mayonnaise
  • ½ cup curry powder
  • 1 tblspn skim milk
  • 2½ cups chopped, cooked chicken
  • 1 cup sliced celery
  • 2 tblspns chopped onion
  • ½ cup slivered almonds, toasted
  • Crisp lettuce leaves

METHOD

  1. Mix together curd, mayonnaise, curry powder and skim milk.
  2. Add chicken, celery and onion.
  3. Toss well.
  4. Chill.
  5. Just before serving, mix in almonds and serve on lettuce leaves.
