TANGY
CHICKEN SALAD
Serves 4.
You will need
- ¾ cup natural skim milk curds
- ¼ cup mayonnaise
- ½ cup curry powder
- 1 tblspn skim milk
- 2½ cups chopped, cooked chicken
- 1 cup sliced celery
- 2 tblspns chopped onion
- ½ cup slivered almonds, toasted
- Crisp lettuce leaves
METHOD
- Mix together
curd, mayonnaise, curry powder and skim milk.
- Add chicken, celery and onion.
- Toss well.
- Chill.
- Just before serving, mix in almonds and serve on lettuce leaves.
