PASTA
SALAD
Serves 6.
You will need
- 250 gms colored pasta shells
- 30 gms chopped green capsicum
- 30 gms sliced spring onions
- 1 tblspns chopped fresh oregano
Dressing:
- 2 tblspns ricotta cheese
- 1 tblspn vinegar
- 3 tblspns skim milk
- ¼ tsp pepper
METHOD
- Cook pasta in a large saucepan of boiling water until just
tender.
- Drain well and mix with capsicum, spring
onions and oregano.
- Spoon into serving bowl. Pour dressing over, toss
lightly and chill.
Dressing
Mix all
dressing ingredients together until smooth.
