FISH SALAD:

Cooking time – 10 minutes

You will need:

  • 1-1¼lb white fish
  • 1-2 hard boiled eggs
  • A few shrimps of prawns to garnish (optional)
  • Salt and pepper
  • 100 gms chopped cucumber
  • 1 tblspn vinegar or lemon juice

METHOD

  1. The most suitable fish for a salad are cod, hake, halibut, skate (particularly good), turbot or fresh haddock. Flat fish such as plaice and whiting are rather unsuitable, for they do not flake easily.
  2. Put the fish in a steamer, add a good sprinkling of salt and pepper and cook over a pan of boiling water until the fish comes away from the bones and seems very soft. The time required varies according to the thickness of the fish, but test after about 10 minutes, if you do not possess a steamer, then cook in about ½ pint water, with seasoning.
  3. Meanwhile soak cucumber for about 30 minutes in the lemon juice or vinegar.
  4. When fish is cold, combine with salad dressing, cucumber and chopped egg white.
  5. Pile on a bed of lettuce, decorate with the chopped egg yolk and for special occasions garnish with a few shrimps or prawns.
