Recipes of Salads

DALIA SALAD

Serves 6.

You will need

  • 1½ cups dalia (cracked wheat)
  • 1 bunch spring onions, finely chopped
  • 1½ pepper chopped
  • ¼ tsp olive oil
  • 1/3 cup lemon juice
  • 2 large ripe tomatoes, chopped

METHOD

  1. Place the cracked wheat in a bowl and cover with cold water.
  2. Leave to stand for about 1 hour. Drain well and press out excess water.
  3. Mix with the spring onions and parsley, season with pepper.
  4. Add oil, lemon juice and tomatoes. It should taste quite tart and fresh.
  5. Place in a serving bowl.
  6. A couple of tablespoons of finely chopped mint can be added as well as the parsley.
