DALIA
SALAD
Serves 6.
You will need
- 1½ cups dalia (cracked wheat)
- 1 bunch spring onions, finely chopped
- 1½ pepper chopped
- ¼ tsp olive oil
- 1/3 cup lemon juice
- 2 large ripe tomatoes, chopped
METHOD
- Place the cracked wheat in a bowl and cover with cold
water.
- Leave to stand for about 1 hour. Drain well and press out excess water.
- Mix with the spring onions and parsley,
season with pepper.
- Add oil, lemon juice and tomatoes. It should taste quite tart and fresh.
- Place in a serving bowl.
- A couple of tablespoons of finely chopped
mint can be added as well as the parsley.
