BROWN
RICE SALAD
Serves 6.
You will need
- 2 cups cooked brown rice
- ½ cup sliced spring onions
- ½ cup sliced radishes
- 1 cup whole kernel corn (unsalted) or
cooked chick peas
- ¼ cup chopped red or green capsicum
- ½ cup chopped unsalted raw peanuts
- 1tsp curry powder
- Pepper
Dressing:
- 2tblspns wine vinegar
- ¼ cup olive or sunflower oil
- ¼ tsp black pepper
- 1 clove of garlic, crushed
METHOD
- Place rice in a large bowl.
- Add spring onions, radishes, corn, capsicum, peanuts and curry powder.
- Stir lightly to mix well.
- Mix the dressing ingredients together and
pour over salad ingredients.
- Season with pepper.
