SPINACH FLORENTINE

Preparation time 30-40 minutes plus baking time
Serves 3-4

  • 1 cup spinach puree
  • 1/3 cup paneer cubes
  • ½ cup mixed boiled vegetables
  • 1 tablespoon onion paste
  • 1 teaspoon ginger-garlic paste
  • 2 tablespoon cooking oil
  • 1 tablespoon grated paneer

METHOD

Heat oil and cook the onion, ginger-garlic paste. Add tomato puree, spinach puree, milk and cook for 2-3 minutes till the mixture is evenly cooked. Season to taste. In a greased baking dish spread the boiled vegetables and paneer cubes. Cover with the spinach mixture. Sprinkle cooking cheese and bake in a hot oven at 450° F for 15-20 minutes.
