BAKED EGGS

Cooking time – 10-12 minutes

You will need:

  • 4 eggs
  • 15 gms butter
  • Seasoning
  • Skimmed milk

METHOD

  1. Grease 4 individual baking dishes with the butter.
  2. Break an egg into each, season well and cover with the milk

Either bake slowly for about 10-12 minutes, until the eggs are just set or steam in a pan of hot water.

Variations: Add asparagus tips to eggs OR Add a tablespoon of cooked mushrooms to eggs OR Add a tablespoon of chopped prawn to each egg.

BAKED EGG IN TOMATO

Cooking time – 15 minutes

  1. Scoop out the interior of a large firm tomato.
  2. Break an egg into it, sprinkle with grated cheese, salt and pepper and bake in a moderate oven.
