TOASTED MUESLI

You will need:

  • 1 cup rolled oats
  • 1 cup rice or wheat flakes
  • ½ cup chopped nuts
  • ¼ cup sesame seeds
  • ½ cup wheat germ
  • 1 tblspn polyunsaturated vegetable oil
  • ¾ cup mixed dried fruit, eg chopped apricots, sultanas, raisins, dates

METHOD

  1. Lightly smear a baking tray with oil.
  2. Mix together all the dry ingredients except the fruit.
  3. Spread on tray and sprinkle with oil.
  4. Bake in a moderately slow oven (160° c) until the mixture turns golden brown, stirring frequently. Cool and then add the dried fruit.
  5. Make 14 serves – 1/3 cup per serve.
