STUFFED MELON

Serves 6.

You will need:

  • Large watermelon
  • 100 gms raspberries or strawberries
  • 1 tblspn chopped mint

METHOD

  1. Cut a slice from the base of the melon so that it will stand.
  2. Slice off the stem end 5cm from the top and set aside to use as a lid.
  3. Remove the seeds from the melon and melon baller to remove the pulp.
  4. Combine the melon balls with raspberries or strawberries and mint.
  5. Marinate for 20 minutes.
  6. Fill the melon shell with fruit, replace the lid and chill thoroughly.
