STUFFED MELON
Serves 6.
You will need:
- Large watermelon
- 100 gms raspberries or strawberries
- 1 tblspn chopped
mint
METHOD
- Cut a slice from the base of the melon so that it will
stand.
- Slice off the stem end 5cm from the top and set aside to use as a lid.
- Remove the seeds from the melon and melon baller to remove the pulp.
- Combine the melon balls with raspberries or strawberries and mint.
- Marinate for 20 minutes.
- Fill the melon shell with fruit, replace the lid and chill thoroughly.
