ORANGE UTTAPPAMS
Serves 4.
You will need:
- 100 g plain wholemeal flour
- 1 egg, beaten
- 150 ml skim milk
- 150 ml water
- ½ tsp sunflower oil
- 1 tblspn honey
- 2 tblspn orange juice
- 2 oranges, peeled
and segmented
- 2 bananas, peeled
and sliced
METHOD
- Sift flour in a bowl. Make a well in the
centre and gradually whisk in the egg and milk. Beat
until smooth and then add the water. You may need more water to give a dropping
consistency. Stand mixture for 30 minutes.
- Heat ½ tsp oil in a small frying pan. When very hot, pour off the excess oil and thinly
coat the base of the pan with the batter. When one side is golden brown turn it over and
cook the other side. Turn out on to absorbent paper and repeat until eight uttapams
are made.
- Heat the honey and orange juice and stir in
the orange and banana, heat through. Divide equally onto each pancake, fold and serve
immediately.
