FRUIT DELIGHT
Serve 4
You will need:
- 150 g dried apricots
- 125 g prunes
- 60 g raisins
- 2 bananas, peeled
and sliced; grated rind and juice of 1 lemon
- 4 tblspn fresh orange juice
METHOD
- Cover the apricots and prunes with water and soak overnight.
- The next day, drain the fruits and stone
the prunes. Place in an ovenproof dish with raisins and bananas.
- Stir in remaining ingredients and bake in a moderate oven (180ºC) for
20 minutes or until fruit has softened.
- Serve plain or with skim milk yoghurt.
