VEGETABLE AND NUT POHE

Preparation time – 20-25 minutes
Serves 2

  • 1 cup rice flakes
  • 1 onion, chopped
  • 1 carrot diced
  • 1/3 cup peas
  • Cabbage shreds
  • 1 teaspoon peanuts
  • 1 teaspoon sesame seeds
  • 1 teaspoon raisins
  • ˝ teaspoon grated ginger
  • 1-2 green chilies, chopped
  • ˝ teaspoon mustard seeds
  • A pinch of turmeric powder
  • 1 tablespoon cooking oil
  • To serve: Coriander leaves, grated coconut and lemon juice.

METHOD

Heat oil and sauté the peanuts till golden. Drain. In the same oil add mustard seeds, chopped onion, and green chilies. Sauté for 1-2 minutes. Add grated ginger, sesame seeds, salt, turmeric and raisins. Wash the rice flakes in a colander and transfer them to prepared mixture. Mix thoroughly. Garnish with grated coconut and coriander leaves. Serve hot after squeezing lemon juice.
