EGG SAUCE 
Cooking time  10- 15 minutes 
You will need: 
  - 1 egg
 
  - Seasoning
 
  - 275 ml of milk
 
  - 20 gms butter
 
 
METHOD 
  - Put the egg, butter and seasoning into the top of a double saucepan or basin over hot
    water.
 
  - Whisk or stir briskly until thick enough to
    coat the back of a wooden spatula.
 
  - Take great care the water never boils vigorously otherwise the sauce will curdle.
