FRUIT PORRIDGE

Serves 4.

You will need:

  • 1 cup rolled oats
  • 2½ cups water
  • 90 g chopped dried fruit, eg dates, apricots, figs and raisins
  • Cinnamon

METHOD

  1. Place rolled oats in a large saucepan.
  2. Bring to boil, lower the heat and simmer for 5 minutes or until porridge is thick and creamy.
  3. Add the dried fruit and cook for a further 2 minutes.
  4. Serve sprinkled with cinnamon.
