FIG AND CHEESE FLOWERS

Serve 6.

You will need:

  • 12 fresh figs
  • 1 cup cottage cheese
  • ½ tsp grated lemon peel
  • ¾ tsp vanilla
  • 12 almonds

METHOD

  1. Cut stems of figs.
  2. Cut through each fig into 4 petals by cutting through from stem end to about 1cm from other end.
  3. Blend cottage cheese, lemon and vanilla until smooth.
  4. To serve, stand 2 to 3 figs on each plate, gently open into flowers, spoon about 2 teaspoons of cheese mixture into the flower and top with an almond.
